INGREDIENTS IN THE JAR
Type 1 wheat flour
Ancient grain wheat flour (type 2)
Toasted seed mix
Dry brewer’s yeast
*Ingredients from organic farming
WHAT TO ADD
• 350 ml of water
• 12 g of salt
How to prepare
Step-by-step instructions
1. Pour the contents of the jar into a bowl
2. Add water and salt
3. Mix roughly until all ingredients are combined
4. Cover with a cloth and let rest for 10 minutes
5. Transfer the dough onto a lightly floured surface
6. Fold the dough: bring the edges toward the center, one at a time, folding it onto itself (5–6 folds total)
7. Let rest for a few minutes and repeat the folds 2–3 times
8. Prepare a bowl lined with a cloth generously dusted with semolina
9. Shape the dough into a loaf and place it into the cloth with the seam facing up
10. Dust the surface with more semolina
11. Cover with the cloth and let rise in a warm place (around 30°C) for 2–3 hours, until doubled in size
12. Gently transfer the loaf onto a baking tray lined with parchment paper (so the seam ends up underneath)
13. Score the surface with a knife, forming an X
14. Bake in a preheated oven at 250°C, on the lowest rack, for 10 minutes
15. Lower the temperature to 180°C and continue baking for about 30 minutes
