INGREDIENTS IN THE JAR 

  • Type 1 wheat flour

  • Ancient grain wheat flour (type 2)

  • Type 2 wheat flour

  • Dry brewer’s yeast

WHAT TO ADD
 

• 350 ml of water

• 12 g of salt

How to prepare

Step-by-step instructions

1. Pour the contents of the jar into a bowl

2. Add water and salt

3. Mix roughly until all ingredients are combined

4. Cover with a cloth and let rest for 10 minutes

5. Transfer the dough onto a lightly floured surface

6. Fold the dough: bring the edges toward the center, one at a time, folding it onto itself (5–6 folds total)

7. Let rest for a few minutes and repeat the folds 2–3 times

8. Transfer the dough into a well-oiled bowl (including the sides)

9. Cover with plastic wrap and let rise in a warm place (around 30°C) for 2–3 hours, until doubled in size

10. Transfer the dough onto a floured surface

11. Gently stretch it with your fingers, without pressing too much

12. Move it onto a baking tray lined with parchment paper

13. Let the stretched dough rest for 15–20 minutes

14. Spread tomato sauce over the surface

15. Bake in a preheated oven at 250°C, on the lowest rack, for about 10 minutes

16. Add toppings as desired and finish baking on the upper rack for another 4–5 minutes
